There are only a finite number of stars in the observable universe, and they are mostly so far that they appear extremely small. Therefore the total amount of light coming from all the stars is quite little, much less than what we get from the sun or even the moon. In directions where there are no stars, we just see darkness, because the space between us and them is mostly empty and therefore light just travels straight through it without scattering like it does in the atmosphere.
